A Bond
Unlike Any Other Alexandra Frenzel and her daughter, Caroline, share their story of bravery in the face of breast cancer.
The Woodlands locals Alexandra and Caroline Frenzel have felt the impact of breast cancer for decades. Alexandra was first diagnosed with Stage II breast cancer when her daughter Caroline was only 6 months old. After a four year battle, she was declared a survivor. Then, when Caroline was 16 years old, Alexandra was diagnosed yet again. This time, it was Stage IV Metastatic Breast Cancer. It was enough to knock anyone down, but this mother-daughter duo are a shining light; their bond is unbreakable and inspiring. Now, they’re sharing some insight into how breast cancer has affected their relationship. On sharing the news that Alexandra had been diagnosed with breast cancer for a second time… Alexandra: I was first diagnosed when Caroline was a baby, so she’s always been aware of breast cancer and how it affects our lives. After I went into remission, I knew that I was at risk and that my daughters were at risk, so we’ve always been open about it. When I had my recurrence, we didn’t hold anything back. We didn’t sugar coat it. For our family, letting the kids be a part of the process has helped them to feel like they’re actively helping. On getting involved in breast cancer awareness… Caroline: Breast cancer has affected our lives so intensely, and I knew that my mom wanted to connect with other women fighting the disease. She has been so strong, and has even created a support group for local patients. I was excited to be a part of the MD Anderson Boot Walk with her because I wanted to recognize her accomplishment in raising money to fight breast cancer, and I wanted her to know how proud I was of her.

Alexandra: Caroline has always been an old soul, and when it was time for me to fight again, she took a lot of responsibilities on herself. It was the same way when we got involved in raising money for breast cancer charities. She’s always been the type to jump into something entirely, and when we first got involved she was all in. It’s been wonderful to see how our journey has progressed through her eyes, particularly with the scholarship-winning essay she wrote for The Breast Cancer Charities of America. On making memories together… Alexandra: We’ve always been an active family, so we enjoy getting out into nature together. In many ways it’s so scary for kids to see a parent fighting cancer, and for parents it can be so overwhelming to tell their kids. As a parent you have to take the moments that you have with your kids and make them matter. I feel so lucky that my kids love spending time with me. Recently we took a mother-daughter trip to Oregon and were able to hike a mountain and just spend time together. I loved that experience. Caroline: I’m always focused on making memories with my mom and bringing as much positivity to those moments as I can. I want to share time with her and be with her. We just love being together, and I love being another piece of the support puzzle that helps to make my mom’s days a little better.
done. Having a conversation and letting the kids know exactly what was going on was healthy for our family. We never wanted them to feel like we had lied to them. On their most treasured memory together… Caroline: The trip we took for my 18th birthday to Oregon is my favorite memory. We got to be together in nature, and went out hiking. We made it to the top of the mountain together, but more than that it was about just having that time together. Alexandra: We did a skydive together. It proved to me that I could still do something crazy and amazing with my kid. It was scary, but it was also exhilarating. Alexandra leads a support group for patients living with an advanced cancer diagnosis called Life In Between at Canopy - Memorial Hermann. It is open to all those fighting advanced cancer, regardless of where you are receiving medical treatment, and is held the 4th Monday of each month. On advice to other families fighting cancer… Caroline: I would just say that it’s important to really understand what your parent is going through. Get to know their diagnosis. Understand what it means, and learn as much as you can. It’s also so important to just be there with them. For me, going to appointments with my mom and sitting with her during chemo has been an amazing way to stay close to her. Alexandra: Keeping the channel of communication open has been the most important thing that we’ve

Stuffed Mushroom Eyeballs 1 pound large button mushrooms 8 ounces cream cheese, softened 1 cup shredded white cheddar cheese

Preheat the oven to 350°F. Line a baking sheet with parchment paper. Gently pop the stems off the mushrooms and set them bottom-side-up on the baking sheet. In a small bowl, mix the softened cream cheese, shredded white cheddar cheese, and garlic powder. Scoop small 1-2 teaspoon portions of the cheese mixture and roll it into balls. Press the balls into the cavities of the mushrooms. 1 teaspoon balls for small mushrooms, and 2 teaspoon balls for larger mushrooms. Resist the urge to overstuff the mushrooms, or the filling will run out! Cut the pimento stuffed olives in half and press them flat-side-up into the top of the cheese filling. Vampire Steaks with Garlic Red Wine Reduction 1 large flank steak 2 teaspoons wet minced garlic 1 teaspoon dried minced garlic 1 teaspoon smoked paprika 1 teaspoon salt ½ teaspoon pepper For the Garlic Red Wine Reduction: 2 tablespoons good quality olive oil 1 + ½ cups sweet onion diced, roughly chopped 3 to 4 cloves of garlic crushed, to taste 2 tablespoons good quality balsamic vinegar 2 cups red wine, such as Casillero del Diablo Cabernet Sauvignon 2 cups good quality beef stock 2 tablespoons butter
Garlic Red Wine Reduction: 1. Dice your onions, or slice thin strips if you prefer. 2. Place a large cast iron pan or skillet on your stovetop, and turn heat to medium high. Pour olive oil in the pan. Place onions in pan and allow to cook until they start to turn golden brown. 3. Add the garlic and continue to cook for about 1 minute, no more than 2 minutes. 4. Add the balsamic vinegar and cook for a few more minutes. You want the vinegar to essentially cook off and the mixture to become syrup-like in texture. 5. Add the wine and cook until it reduces by ⅔. This takes a while, so don’t feel like you have to rush this step. Just keep checking it until it starts to cook down. 6. Add the beef stock to the pan, and bring to a boil. Allow it to come to a full boil, then reduce to a simmer, allowing it to cook until it’s reduced by ⅔. Again, don’t rush it. Check on it and wait for it to fully reduce. It’s not a super quick process. 7. If you don’t want pieces of garlic you can remove them. The flavour is amazing when you bite into it. 8. Add butter to the pan and turn heat up a little bit. Whisk until the mixture thickens into a nice consistency. It should be thick but still able to drizzle over steaks. Set aside until needed. For the Vampire Steaks: 1. Lay flank steak on a cutting board. 2. In a bowl, mix the minced garlic, smoked paprika, salt and pepper together. 3. Rub the spice mixture all over both sides of the flank steak. 4. Put the flank steak in a container and cover tightly. Place in fridge for a minimum of 4 hours, or preferably overnight. 5. Take the flank steak out. Discard any juices. 6. Preheat your grill to a medium high heat. Allow it to reach the proper temperature, just like preheating an oven. 7. Place the steak bottom side down first. Close the grill lid and allow to cook for about 4 to 6 minutes, depending on how you like your steak. If you like it rare, flip it sooner, if you like it well done, flip it later. 8. Lift the grill lid and flip the steak over so the top side is down on the grill grates. Close the grill lid and allow to cook for about 4 to 6 minutes, depending on how you like your steak. If you like it rare, flip it sooner, if you like it well done, flip it later. 9. Remove the steak from the grill and allow to rest on a cutting board for about 5 to 10 minutes. How to put it all together: 1. Slice the steak into diagonal thin strips, pour red wine reduction over top. 2. Pour a nice glass of Casillero del Diablo Cabernet Sauvignon to go with your dinner. 3. Enjoy with a big old vampire loving smile!

Squid Ink Pasta with Buttery Lobster 1 pound squid ink pasta 2 whole lobster tails, removed from shell and cut into bite sized pieces 1 tablespoon butter ½ cup panko breadcrumbs ½ teaspoon red pepper flakes 1 teaspoon lemon zest 2 teaspoons parsely, chopped 1. 2.

Bring a large pot of salted water to a boil, cook pasta according to package. Save about a cup of pasta water and drain pasta well. Heat 1 tablespoon of butter over medium heat, add the panko to the pan and toast until golden brown. Remove from heat and add red pepper flake, lemon zest, chopped parsley and kosher salt. Whisk to combine. Heat the 2 tablespoons of butter in a large shallow pan over medium heat. Add the lobster and sauté in the butter, about 2 – 3 minutes until slightly firm. Remove to a plate. Add the garlic to the pan. Cook while stirring – about 1 minute. Add wine and cook over high heat until reduced by half, about 8 – 10 minutes. Add the lemon juice to the pan and slowly begin adding the cubed cold butter. Whisk until butter is completely melted and sauce looks thickened and shiny. Return the cooked lobster to the skillet, heating through. Season sauce to taste preference with kosher salt and ground black pepper. About a pinch of each. Toss cooked pasta in the sauce, add a splash of pasta water to loosen everything up. Serve immediately topped with toasted panko breadcrumbs and grated parmesan. Enjoy!

In one bowl, place the beaten eggs, sage, thyme and seasoning. In another bowl, add the flour. Take a piece of pumpkin and dip into the egg and then place into the flour. Fry on medium heat in olive oil for five minutes on each side (You should be able to fry about five pieces at a time). Serve warm as an appetizer or as a side dish.

Sweet Potato Bites with Apple Cider Brussel Sprouts & Cranberry Gastrique For the Sweet Potatoes: 3 medium sweet potatoes 3 cups panko breadcrumbs 1 egg pinch of nutmeg pinch of salt and pepper 1 tablespoon vegetable oil
For the Cranberry Gastrique: ¾ cup fresh cranberries ¾ cup granulated sugar 1 cup red wine vinegar ¼ red wine
For the Brussel Sprouts: 1 pound brussel sprouts, shredded 1 tablespoon olive oil 2 tablespoons apple cider vinegar ⅓ cup water salt and pepper, to taste
Sweet Potatoes: 1. Preheat oven to 400°F. 2. Poke holes all over the sweet potatoes using a fork. Place on a baking sheet and bake for about an hour until cooked through. Remove from oven, let it cool, and then remove skin. 3. Mash the potatoes in a large bowl. Add the egg, 1/2 cups panko, nutmeg, and salt and pepper. Stir to combine. In another bowl, add the remaining panko breadcrumbs. 4. Take the sweet potato mixture and form 2 inch patties. Dredge the sweet potato patty in the breadcrumbs. Repeat until all the sweet potato mixture has been used. 5. Preheat a skillet to medium heat, add the vegetable oil. Fry the sweet potato patties in the vegetable oil about 2 minutes on each side. Remove from skillet and place on a plate covered with a paper towel until ready to top with brussel sprouts and cranberry gastrique. Brussel Sprouts: 1. In medium skillet preheated to medium-high heat, add the olive oil, brussel sprouts, salt, and pepper. Saute the brussel sprouts for a few minutes. 2. Add the water and apple cider vinegar. Continue cooking until the brussel sprouts have soften. Set aside to cool slightly. Cranberry Gastrique: 1. In a medium saucepan, add all the ingredients. Bring to a boil and then reduce to a simmer for at least 15 minutes or until reduced by half. 2. Remove from heat and strain through a mesh sieve. Set aside solid cranberries and pour the liquid into a dispenser. To Serve: 1. Place a sweet potato bite on a plate, top with brussel sprout, a solid cranberry and pour gastrique over the top. 2. Serve immediately.

Black Sesame Thumbprint Cookies with Meyer Lemon Curd Meyer Lemon Curd: ¾ cup freshly squeezed meyer lemon juice or regular lemon juice (from about 5 blood oranges), strained and pulp discarded 4 tablespoons unsalted butter, room temperature ½ cup white granulated sugar 2 large egg yolks 2 large eggs ¼ teaspoon salt

Black Sesame Thumbprint Cookies: 1¼ cup all-purpose flour ½ teaspoon baking powder ½ teaspoon baking soda ⅓ cup smooth black sesame paste ½ cup unsalted butter, at room temperature ⅓ cup light or dark brown sugar 1 large egg 1 teaspoon vanilla extract
In a small saucepan, placed over medium heat, simmer the lemon juice until it reduces by half (to about ⅓ cup), about 3-5 minutes. Set aside to cool slightly. 2. In the stainless steel bowl (note: you’ll use this bowl as a makeshift double-boiler later) of your stand-up mixer, add the softened butter and sugar and beat until light and fluffy, about 2 minutes. 3. Add the egg yolks, beat the mixture together, and then add the eggs, beating again until they’re well incorporated. Stir in the salt, and then in a few batches, add lemon juice. The mixture will look curdled and you might scratch your head and wonder if it’s right, it will be! 4. Rinse out the small saucepan you used earlier, and fill it with a few inches of water. Bring the water to a simmer and place your stainless steel bowl of curd mixture on top. Stir constantly, and heat the curd slowly enough that the sugar has time to dissolve and the whole mess becomes cohesive; this step usually takes about 5 to 10 minutes. Pull the curd from the heat when it is just thick enough to coat your spoon and until a thermometer reads 166°F. The curd will thicken as it cools. 5. Run the curd through a sieve into a chilled bowl a few times just to ensure it is silky smooth. This step is highly recommended! Transfer the curd to a container and keep in the fridge in an airtight container, for up to a week. 6. To make the cookies: In a medium mixing bowl, combine the allpurpose flour, baking powder, baking soda and salt. Set aside. 7. In the bowl of a stand-up mixer (with the paddle attachment) or in a large bowl (using a hand-mixer), beat together the black sesame paste and softened butter until very smooth, about 30 seconds. Add the brown sugar and beat once more until smooth, about 30 seconds. Next, beat in the egg and vanilla extract. In two batches, add the dry ingredients until no speckles of flour are visible. The dough should be soft and supple. Transfer to the fridge to chill for about 10 minutes. 8. Meanwhile, preheat the oven to 350°F. Line a baking sheet with parchment and set aside. 9. Using a 2-ounce cookie dough scooper (or a tablespoon), scoop out a ball of dough. Roll the dough into a ball using the palm of your hands. Transfer to the cookie sheet. Using the opposite end of a spatula, make an indentation in the center of the cookie. Repeat the scooping, rolling and “thumbprinting” process until you’ve worked through about half the dough (you’ll need to bake these cookies in two batches), being sure to space the cookies about 3 inches apart (they’ll spread a bit). 10. Transfer to the oven and bake for 15 minutes, until the cookies have spread slightly. Carefully remove the baking sheet from the oven and, using the opposite end of a spatula, re-make the indentation in the center of the cookie. Allow to cool for 5 minutes on the baking sheet (they’ll be very fragile right when they come out of the oven) and then transfer them to a cooling rack until they’re room temperature. When cooled, add a teaspoon of the meyer lemon curd to the center of the cookies. These cookies will keep in an airtight container for up to 5 days.

Chocolate Vegan Mousse For the Mousse 5 ounces dark chocolate (minimum 70% cacao solids) 2 large ripe avocados 2 tablespoons cacao powder 2 teaspoons vanilla paste or seeds from 1 vanilla pod 2 teaspoons honey 9 ounces almond yogurt

To Decorate handful of almonds blitzed until crumbs form or 2 ounces of almond flour 2 teaspoons of cacao powder 2 cookies with rounded edges melted dark chocolate for decorating 2 tops of mint leaf 2 edible flowers or flower decoration
Break the dark chocolate in smaller pieces and place in a heatproof dish over a pan of simmering water. Leave it to melt completely and then remove from heat and set on one side to cool. In a food processor with an S blade, place the flesh from the avocadoes, cacao powder, vanilla paste, honey, almond yogurt and cooled melted chocolate. Blitz for 3 min or until smooth and creamy. Place the mousse in two large cocktail glasses with a large rim or 4 smaller water glasses. Prepare the dirt for the grave by mixing together the almond flour and cacao powder until it becomes dark in appearance. Take 2 cookies and on the top half write “RIP” in dark chocolate. Leave to set. Scatter the dirt generously on top of the mousse. Place the cookie inside the mousse, ¾ towards the rim of the glass and at a slight angle. Place the mint and the edible flowers in from of the biscuit. And here you go, your very own vegan chocolate Halloween graves.

Icing: 1 cup powdered sugar (unsifted) 1 tablespoon milk (+ 1 teaspoon if too thick for your taste) 1 teaspoon lemon juice 1/2 teaspoon vanilla extract
In a large bowl, whisk together the flour, salt, and sugar. Cut the butter into the flour using a fork or a pastry cutter. The butter should break down to the point where it resembles oat flakes and some may be the size of peas. Add the buttermilk and egg yolk to the mixture until the dough starts to form a ball. Dump the dough out onto a clean surface and form a ball. Place dough in plastic wrap and tightly wrap the dough. Alternately, you can place the dough back into the bowl and cover, refrigerate. Let dough cool for at least 30 minutes. Prepare apple pie filling while you wait. Peel, core and dice apples into small, thin pieces. Place apples in a large bowl. Add orange juice, vanilla bean paste, and toss apples to evenly coat. In another bowl, whisk together flour, granulated sugar, light-brown sugar, cinnamon and nutmeg. Pour flour mixture over apple mixture and toss to evenly coat, set aside. Place a rack near the center of the oven and preheat to 350°F. Divide the dough into 2 equal portions. Roll the dough out on a lightly floured surface into a 14 x 10 rectangle. Fold the dough over the rolling pin gently and transfer to a 13 x 9 baking pan. Toss the apple mixture and then pour it over the top of the prepared pie crust. If you’ve got excess liquid pooling at the bottom, save the liquid and pour over the apples. Using a tablespoon, pour 2-3 tablespoons of the liquid over the apples. Roll the remaining dough into the same 14 x10 rectangle as before and transfer the dough over to the baking dish. Cover the apples and pinch the corners. Using a small pairing knife, prick small holes on the top crust. In a small mixing bowl, whisk egg white until foamy, brush egg white over top pie crust. In another small mixing bowl, whisk together turbinado sugar with cinnamon. Sprinkle cinnamon sugar mixture evenly over the top of pie crust. Let the apple pie bars bake for 50-60 minutes, or until golden brown. Remove from the oven and allow to cool for 30 minutes at room temperature. The bars are ready to serve after 30 minutes but they won’t hold their shape. If you want perfect bars, place the baking pan in the refrigerator for 30 minutes. Slice once cooled. Prepare the icing while they cool. In a small bowl, combine the powdered sugar, 1 tablespoon milk, lemon juice, and vanilla extract. If the icing is thick and doesn’t drip with a spoon, add the 1 teaspoon milk. Keep in mind if it’s too thin it won’t harden properly on the bars. Drizzle icing over the apple pie bars. Serve immediately.

In a saucepan fitted with a candy thermometer, melt sugar, syrup, ⅔ cup water, vinegar and salt over medium heat. Cook, stirring occasionally, until mixture reaches 260°F, 5 to 10 minutes. Watch carefully so mixture does not boil over. In a very large bowl, combine popcorn and peanuts, if using. Cover a work surface with waxed or parchment paper. When syrup mixture is ready, turn off heat and stir in butter and baking soda; it will foam up. Pour about ⅔ of syrup over popcorn and set remainder over very low heat. Mix popcorn well with wooden spoon. Working quickly, butter hands and form mixture into balls, setting them on prepared surface to cool; this is best done by more than one person, so syrup does not have time to harden. If mixture seems dry or isn’t holding together, stir in remaining syrup. Cool and serve, or wrap individually in waxed paper and store in an airtight container.

SAM HOUSTON MEMORIAL MUSEUM While Sam Houston’s final resting place is in Huntsville, Texas, the former General, Senator and Governor had traveled all over to ensure the rights of Native Americans, railroads and general prosperity. The Sam Houston Memorial Museum is located where Sam Houston finally succumbed to pneumonia in 1863. Many Texans come to visit where the beloved Sam Houston passed away, and find themselves listening to phantom footsteps on the gravel below and disembodied voices of unseen spirits in the room. Named after the President of the Confederacy, Jefferson Davis Hospital was erected in 1924 atop what was once a Confederate cemetery and before that, a burial site for plague victims. Several human bones were uncovered during excavation. Throughout its history, the building served as a hospital, a psychiatric ward, juvenile detention center and food stamp distribution venue. The hospital sat abandoned for decades and was said to be haunted by angry soldiers, doctors, nurses and patients. Although the building was off limits, it didn’t stop paranormal investigators and curious individuals from sneaking in. Screams and howls have been heard throughout the building and shadowy figures and unusual sightings have been caught on film. The building has since been renovated into The Elder Street Artists Lofts-affordable living in a low-income neighborhood. Have the spirits finally gone to rest? THE JULIA IDESON BUILDING In the early 1900s, library caretaker Jacob Frank Cramer used to roam the premises of the Julia Ideson Building, now across from downtown Houston’s Main Branch Library. He spent his leisure time strolling through the halls, playing violin and playing with his dog. In 1936, he died alone in his room, located in the basement. The ghosts of Cramer and his dog, Petey, are said to haunt the library to this day. Employees report eerie strains of violin music, especially on gloomy days, and the clicking of Petey’s toenails on the marble floors is heard throughout the halls. Photo: architizer.com

NATIONAL MUSEUM OF FUNER AL HISTORY Arguably Houston’s most direct line to the afterlife is the National Museum of Funeral History. Located on the north side of the city near Bush Intercontinental Airport, NMFH has the country’s largest collection of funeral service artifacts, from hearses through the ages to an extensive collection of memorabilia from U.S. presidents’ funerals. There’s an exhibit dedicated to exploring the evolution of the embalming process, from ancient Egypt to today and another that looks at the Mexican custom celebrating Dia de los Muertos, or Day of the Dead. GLENWOOD CEMETERY L A CAR AFE Built in 1866, La Carafe is widely thought to be the oldest bar in Houston and is said to be haunted by a former bartender named Carl. Visitors report hearing heavy objects moved around, footsteps, glass breaking, and the apparition of an African American man thought to be Carl is often seen looking through second floor windows after the bar has been closed down for the night.
This historic 60 acre cemetery is the final resting place for eccentric aviator and business tycoon Howard Hughes. Although perfectly landscaped and serene, the rows and rows of headstones and mausoleums are thought to be severely haunted.
