WINE LIST

“Wine is one of the most civilized things in the world and one of the most natural things of the world that has been brought to the greatest perfection, and it offers a greater range for enjoyment and appreciation than, possibly, any other purely sensory thing.” — Ernest Hemingway

For the wine lover, The Timber’s selection of wine is unrivaled in Ketchikan. We want everyone to feel comfortable when selecting wine and encourage our guests to try something new.

This wine exhibits a fresh stone fruit and citrus on the palate with hints of almonds and baked bread on the nose. Dom pairs well with salty foods like caviar and oysters.

Veuve Clicquot Yellow Label, Brut, Champagne . . . . . . . . . . . . . . . . . . . . . . . . 109

Caymus 2013 Cabernet Sauvignon, Special Selection, Napa . . . . . . . . . . . . 299 The most highly sought after Napa Valley Cabernet, rich, voluptuous raspberry and dark plum fruit, with velvety tannins and a spicy, sweet tobacco nose.

Heitz 2005 Cabernet Sauvignon, Martha’s Vineyard, Napa . . . . . . . . . . . . . 339

The most sought after Champagne in America shows elegant lemon tones on the palate and white flowers on the nose.

Considered to be the best vineyard site outside of France for Cabernet. This wine is full of powerful dark berry fruit, with an herbaceous nose of tarragon, with hints of anise and eucalyptus.

Palmes d’Or 2002 Brut, Champagne . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . 239

Hewitt 2011 Cabernet Sauvignon, Estate, Rutherford, Napa . . . . . . . . . . . . 219

In France, the Palmes d’Or (or Golden Palm) is the most elevated distinction awarded to grace and talent. Palmes d’Or is the pinnacle of fine vintage Champagne. First aromas of white pear, peach, walnut and dried apricot fruit give way to secondary more intense aromas of pepper, ginger and red fruits. It has excellent structure and an incredibly long finish with unforgettable elegance.

Krug Brut Rose, Champagne . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . 499 Perhaps the best food wine made. This Rose is creamy in texture, full of strawberry and rhubarb fruit, with notes of truffle and vanilla in the nose.

Banfi 2008 Brunello, Montalcino, Tuscany . . . . . . . . . . . . . . . . . . . . . . . . . . . . 129 The garnet color of this wine belies its power and intensity. This wine has very focused light berry fruit profile, but a long velvety finish and intriguing nose of forest floor and musk.

Prunotto 2009 Bussia Barolo DOCG, Italy . . . . . . . . . . . . . . . . . . . . . . . . . . . . . 169 The Bussia vineyard is one of the most prestigious single vineyards in the township of Monforte, the heart of the Barolo area. It lies 1,200 feet above sea level with a southern exposure. The Bussia Barolo begins with aromas of ripe berry fruit fused with floral and spicy notes. The flavor is intense and complex, with sweet and ample tannins and a very long finish

Antica 2008 Townsend Vineyard Cabernet Sauvignon, Napa . . . . . . . . .. . . 179 Set in the NW corner of the estate is a 40-acre parcel of land purchased from longtime friend and neighbor, Mrs. June Townsend. The Antinori family planted 24 acres of Cabernet Sauvignon there in 1999 and named it “Townsend Vineyard” in tribute. Deep aromas of sweet blackberries and cassis mingle with minerals, earth, spice and tobacco. Layered and intense fruit flavors lead to sweet tannins that are firm and well-integrated.

The number two wine in the world last year. Hedonistic blackberry fruit and plum with Madagascar vanilla and coffee in the nose.

Quilceda Creek 2013 Cabernet Sauvignon, Columbia Valley, WA . . . . . . . . 309 This is a rich, ripe, concentrated wine with a liqueur-like texture and weight, blackberry, blueberry, cassis and plum fruit with nuances of violets, Asian soy, smoke, cedar, vanilla, minerals and black tea.

Stag’s Leap Wine Cellars 2012 Cask 23 Cabernet Sauvignon, Napa . . . . . . 389 The story of CASK 23 began during the harvest of 1974. One lot from S.L.V. was so beautiful and deliciously distinct, the winery decided it should be bottled separately. On the palate the wine is full bodied with rich dark berry fruit, hints of cedar and white truffle that lead to a long fruit and spice-driven finish.

Stag’s Leap Wine Cellars 2012 S.L.V Cabernet Sauvignon, Napa . . . . . .. . . 239 Also known as Stag’s Leap Vineyards, is the winery’s first vineyard. Planted in 1970, it achieved international fame when three-year-old vines from the 1973 harvest produced a wine that bested some of France’s greatest wines in a 1976 blind tasting known as the “Judgment of Paris.” The powerful entry leads to a rich and full palate of black currant and red fruit with anise and cocoa top notes. The wine’s structured tannins, concentrated fruit core and pleasing minerality leads to a lingering finish.

Opus One 2012, Napa . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . 499 Opus One is a joint venture between the late Robert Mondavi and Baron Phillip de Rothschild the famous Bordeaux House of France. Opus is located in the heart of Napa Valley in the prime spot for growing Cabernet, and its large classics-inspired edifice is meant to impress. This winery is the poster-child for premium wine in Napa.

Chateau Ste. Michelle 2014 Cold Creek Vineyard Chardonnay Columbia Valley, Washington Chateau Ste. Michelle 2013 Canoe Ridge Estate Merlot, Horse Heaven Hills Chateau Ste. Michelle 2013 Cold Creek Vineyard Cabernet Sauvignon, Columbia Valley Chateau Ste. Michelle’s aggressive sustainability program at Cold Creek and Canoe Ridge Estate vineyards focuses on three main areas in which our viticulture staff continually analyzes and fine-tunes operations: pest, soil and plant, and water management. These practices helped Chateau Ste. Michelle’s Cold Creek and Canoe Ridge Estate vineyards earn third party sustainable certification for LIVE and Salmon Safe in the fall of 2009. SALMON-SAFE Erosion and runoff from hill side vineyards can bring silt into streams, reducing the ability of native salmon to spawn and thrive. The Salmon-Safe program helps vineyards protect and restore salmon habitat by planting trees on streams, growing cover crops to control run-off, and apply natural methods to control weeds and pests. Vineyards that meet the program’s rigorous standards earn certification and are able to use the Salmon-Safe label. The Salmon-Safe label on a bottle of wine means the grapes used in that wine were grown using healthy practices that keep Pacific Northwest rivers clean enough for native salmon to thrive. Salmon-Safe certification standards are a part of LIVE certification. For more information on Salmon Safe visit www.salmonsafe.org. LIVE (LOW INPUT VITICULTURE AND ENOLOGY) LIVE is a non-profit organization that offers third-party sustainable certification through the International Organization for Biological Control, which promotes the use of sustainable, environmentally safe, economically feasible and socially acceptable control methods. LIVE uses international standards of sustainable viticultural and enological practices in both wine-grape and wine production. These practices are based on an independent 3rd-party-verified checklist system consisting of required and prohibited elements, as well as numerous ecological options.
