Art is steeped in passion. This has never been more evident than in Odyssey, an exhibit filled with pieces by Alice Palmer and Devin Nelson hosted at the Glade Cultural Center. The pieces chronicle their journey through one of the top art schools in the world, The Florence Academy of Art. The exhibit is unique as it shows two students’ progression through the same curriculum with wildly different results. There is an additional layer of intimacy in the pieces, as the two artists from opposite sides of the world also met and fell in love as they progressed through the program. Alice Palmer made her way to Florence from Perth, Australia where she attended the University of Western Australia before beginning the intensive three year program at The Florence Academy of Art. Each of her pieces show a deep understanding and connection to the human experience, from the small portrait of a fellow student that beautifully balances old and new, to the bright, green landscape that she captured in her spare time at the Academy.

Devin Nelson is a deeply passionate artist whose work is darkly vibrant with an air of mystique and obscurity. He describes his journey as an artist as truly beginning the day that he stepped foot in The Florence Academy of Art. Each of his pieces tells a story, with standouts that include a stunning portrait of a model named Ruby Magic, inspired by the stories he heard as a child of Marie Laveaux and a stunning landscape that shows the beauty in shadows.

ENTREVISTA EXCLUSIVA Exclusive Interview

The program that the artists follow at the Academy builds their skills and hones their talent and begins with sketching before progressing to a final composition of their own choice. Through each piece in Odyssey, their growth as artists is apparent, and the creative freedom that can be seen in their distinctive styles makes the juxtaposition of the pieces innately interesting. “The program teaches us in the ways of the old masters,” Nelson said. “There is an immediate sense of reverence that comes with joining the academy because you are surrounded by students and graduates, which gives you a constant desire to strive for excellence.” Students begin their practice before the sun comes up, and often do not leave the studio until after the sun goes down. They are taught in the techniques and the language of the old masters, which includes stretching their own canvas, and mixing their own paint. These techniques help to ensure the longevity of each and every piece that they produce. The influence of history can be seen in the colors that are expertly blended to evoke a sense of gravity, and in the posing of each model, while the details show how Palmer and Nelson have been inspired by the past and wonderfully married the past to the contemporary world. In a still life by Palmer that illustrates the concept, titled Three Apples, she incorporates her favorite book of poetry, and a butterfly from her home in Australia. “The work is a story of highs and lows,” Palmer said. “The agony and the ecstasy. We put a lot of ourselves into each piece, it’s very narrative. We take each element that we learn from composition and drawing as a basis to create shadows and spacing to take the items and create the scene.” Both agree that portraiture is the most difficult when it comes to technique. It takes years of practice and learning to be able to capture the minute details that bring a portrait to life. Unlike a photograph, artists spend weeks with the people they are painting, and emotions of both the artist and the model play a huge role in the work. “Everything is indicative of the headspace that you’re in,” Palmer said. “That’s why I love realism. What I draw or paint is exactly what I want you to see from my world. We spend so much time with these people that we are able to build a portrait of who they are.” Nelson agrees that the closeness of an artist and model can elevate a piece, saying that “you’re very aware of their emotional state from day to day. You know them and you feel close to them.” When asked if they had a favorite piece in the exhibit, both choose a painting by the other. Palmer singled out a portrait that Nelson had completed of a model named Ruby Magic. “She puts so much of herself in every piece of work,” Palmer said. “She is the only model that I believe will also become a close friend. She has such a strong presence and I think that Devin completely captured her power in this portrait.”

Nelson exuberantly led us to a portrait of Palmer’s titled Marco is a Poet. The scene shows Marco, the model, posed in a sweater borrowed from Palmer’s studio mate. The portrait is a wonderful example of the way that a model can influence a piece. Palmer describes him as someone who loves art, and cares about it deeply, noting that his own passion for art helped to elevate the sitting. Together, they see the end of their journey at the Academy as the jumping off point for the rest of their careers. Nelson has already completed the program, while Palmer returned to Florence to complete her training immediately after the opening of the exhibit. Their passion and zeal for the art that they create both together and individually is a foreshadowing of great things to come. Inspired by Marie Leveau by Devin Nelson

windstar pride Story by Linda Bauer, author of Capitol Hill Cooks Photos by Steve Bauer, author of Chameleon If you seek an intimate, adventurous and interesting sailing experience with only about two hundred fellow guests -Windstar Pride is your perfect choice. Windstar has acquired the yachts of another company and refurbished them, offering an excellent experience in the Caribbean in the winter, a great way to escape the cold and a chance to enjoy snorkeling, swimming, fine cuisine and great conversation. A flight from Houston directly to San Juan was most comfortable and even in December, after the hurricane the airport was in great shape for visitors. A short cab ride to the Windstar Pride was a welcome way to start my adventure. Having lived in Puerto Rico in the past, it was great to see San Juan full of life and much better than the national news had suggested. The locals pleaded to tell others to return and help them recover via business and tourism. The ship docks in such a fine area that after our champagne welcome, thrill of enjoying one of the best and largest staterooms at sea, unpacking in the wonderful walk-in closet and setup in the double sink bath, a quick and efficient life boat drill was conducted. Soon a short walk enabled us to spend the evening enjoying Old Town and seeing that many of the shops and vendors,

though some using generators, were thrilled with the visitors and merrymakers. A new coat of paint on many of the buildings made the wonderful city come alive and of course many chose to go to El Morro Fort for fun and history as well as San Cristobal for a great walk and view of the ocean. Other options included a tour of the Bacardi Rum plant or a ride on the Catano Ferry to see the area. Evenings are spent by some in the small casino or at the piano bar, browsing in the gift shop or just reading books from the library and enjoying movies in their cabin. Cuisine is a major emphasis on Windstar and dining as a group or couple enables guests to enjoy fine food and conversation. Great chefs lead the dining options and loved to see the smiles of the diners. We found the staff to be some of the very best and with lengthy terms onboard. I was so happy to sit on the back deck for morning breakfasts and gaze upon the water. Lunches were in that same area with a choice of the Veranda or Windstar Burger Bar. The finest cuisine memories are those of the signature beach party in the wonderful cove at Pigeon Island in St. Lucia with the steel band and numerous water toys. The best night of all was the deck party with every conceivable dish and the finest lobsters at sea grilled to perfection. The highlight was a dance party and most interesting was a meteor shower that seemed made to order with its dazzling effects. Even better was the fact that the larger sister ship, the Windstar Surf was also docked in the bay and both ships raised their sails and played the familiar song by Vangelis that marks each sail away,” Conquest of Paradise”. It was simply awesome and unforgettable! “Food is our common ground, a universal experience,” claimed James Beard. Our cruise, where guest chef, Mario Pagan, often claimed to be Puerto Rico’s finest chef, offered tasty dishes featuring his heritage and served at his three restaurants. He also enjoyed teaching, sharing and chatting with the guests. His ahi tuna tartare is simple, delightful and healthy. Reservations are required for a memorable dinner under the stars at Candles for a special menu and meal. The Star Grill is another venue where the bar area transforms into another dining option.

The Windspa offered specials throughout the week and I took advantage of one with a neck massage, foot massage and a fine paraffin treatment of my hands. The small spa is most welcoming and the staff was wonderful. The exercise equipment is adjacent and each morning stretch and other classes are offered on the deck. My true love is the way that Windstar opens up the back of the ship. They offer water skiing, huge anchored rafts to use as trampolines, sailboats, paddle boards, and kayaks. Each of the bays where Windstar Pride would set anchor was simply picture postcard perfect. One near a French island is possibly the best in all of the Caribbean. What a way to take tours on catamarans, submarines, SCUBA, SNUBA, aerial trams, golfing, jeep exploration, Segways and snorkeling. The only island in the Caribbean I had not previously visited was Montserrat, which I relished on the cruise. Do not miss the ship’s tour to the Buried City. This bird’s eye view is mind boggling while one stands next to the destroyed pool and building of the Montserrat Spring Hotel. The dust and eerily empty and vacant villages are amazing, and the guides tell the story of their island, family and friends. The area is protected so one must take the tour to witness all that is available to be seen. St. Barts is a favorite of many and a short walk past the immense yachts, French cafes and shops is not to be missed. Shell Beach is less than a mile from the dock and a superb way to spend the day at the beach, look for shells and sea glass. The return to San Juan is a great way to end a simply lovely and fun cruise vacation, and I must mention that Windstar does a fine job, even to the finish by offering luggage storage at the pier so guests may enjoy a stroll through Old Town, or a fine set of tours with an airport drop off or another option you may wish to take a cab to the Marriott that is in Condado and purchase a day pass to enjoy the beach, pool and restaurant. Such fine options really do allow travelers to enjoy their time right up until their return home to Texas, ready for another adventure. Windstar is truly 180 degrees from ordinary.

SPANISH SHRIMP Ingredients 1 pound of shrimp, peeled and deveined (tails optional), size 21-25 ⅓ cup olive oil 3 large cloves of garlic, sliced in half ¼ cup of chopped parsley 1 ½ teaspoon paprika ½ teaspoon cumin ½ teaspoon nutmeg ½ teaspoon chili powder ½ teaspoon cayenne ½ teaspoon onion powder ¼ teaspoon garlic powder ¼ teaspoon sugar salt and pepper, to taste

Instructions 1.

If using frozen shrimp, thaw for about 10-15 minutes in cold water before using. While waiting, combine dried spices (except salt and pepper) in a small bowl. Set aside.

2.

In a cast iron skillet, add olive oil and garlic to a cold pan. Turn heat to medium-low, and cook garlic for 2-3 minutes, or until garlic is softened, but not brown. Remove garlic from the pan and set aside.

3.

Turn heat up to high. Wait for a minute to allow pan to come to temperature.

4.

Season raw shrimp lightly with salt and pepper.

5.

Add shrimp and sear about 1 minute per side. Shrimp should quickly become pink with light brown sear-marks.

6.

Toss in spice mixture, cooked garlic, and about half of the parsley. Stir briefly; about 30 seconds more. Season with additional salt and pepper as needed (to taste).

7.

Remove from heat.

8.

Serve in the cast iron skillet, or remove to a serving dish. Top with the remaining parsley.

9.

Serve with toasted french bread.

Ingredients

GRILLED FLATIRON STEAK WITH TOASTED SPICE VINAIGRETTE

Red Onion Relish

¼ cup red wine

3 red onions, halved and sliced

1 tablespoon olive oil

1 ½ pound flatiron or skirt steak, cut into 4 pieces

1 teaspoon coriander seeds

Condiments:

1 tablespoon olive oil

homemade aioli

kosher salt

fresh arugula

freshly ground black pepper

fresh strawberries

4 beefsteak or heirloom tomatoes, sliced ½” thick

12 strawberries, chopped ⅓ cup sugar 1 ½ tablespoon raspberry or red wine vinegar

1 ½ pounds ground meat 1 teaspoon salt ½ teaspoon pepper 1 tablespoon fresh thyme, finely

Melt the butter in a large, deep pan over medium heat. When the butter foams up, add the sliced red onions and simmer until they are tender and transparent. Chop the strawberries and combine the sugar with the vinegar and red wine. Add the chopped strawberries and the sugar-vinegar mixture to the red onions. Turn up the heat and continue to cook until the liquid has reduced and evaporated. Add salt, pepper and fresh thyme to the ground meat and mix well. Shape into sliders (approximately 4 ounces each). Melt the butter and oil in a pan over medium heat and fry the sliders for 2 minutes on each side.

Instructions Steak: 1.

Prepare grill for medium-high heat. Rub steak with oil; season with salt and pepper. Grill about 4 minutes per side for medium-rare. Let cool 5 minutes before slicing against the grain.

Vinaigrette: 2.

Toast coriander, cumin, and fennel seeds in a dry small skillet over medium heat, tossing, until fragrant, about 3 minutes. Let cool, then chop. Whisk with oil, vinegar, and mustard in a small bowl; season with salt and pepper. Serve steak on top of tomatoes with vinaigrette spooned over.

Spread the homemade aioli on a slider or burger bun and top with fresh arugula which gives the burger a peppery flavor.

SWEET & SAVORY STUFFED PORK LOIN WITH GRILLED VEGETABLE CROSTINI

Ingredients Pork Loin 3 pounds pork loin, butterflied and pounded butchers twine for securing the pork Marinade ¼ cup olive oil

¾ teaspoon salt

1 bunch of fresh basil, chopped

2 cloves of garlic

½ teaspoon black pepper

½ cup of dried apricots, chopped

½ sweet onion

½ teaspoon paprika 1 teaspoon dried oregano Filling 1 package of Sargento Chef Blends 4 State Cheddar

juice of 1 lemon

3 cloves of garlic, chopped

Crostini Sargento Chef Blends 4 State Cheddar one loaf of Italian bread

½ teaspoon salt ½ teaspoon black pepper olive oil for drizzling

1 broccoli crown 1 pint of grape tomatoes

Instructions Stuffed Pork Loin

1.

Combine all of the ingredients for the marinade in a small bowl and mix. Set aside.

Place the broccoli in salted water and give a quick boil. Do not let the broccoli overcook. Drain and set aside.

Combine all of the ingredients for the pork loin filling in a bowl and toss.

Place the flattened pork loin on a clean surface and rub marinade on the meat.

Heat a griddle and place the grape tomatoes, garlic in the skin and the sweet onion on the griddle with a drizzle of olive oil and a dash of salt. Grill until slightly charred.

Ingredients 1 pound orecchiete pasta 1 tablespoon unsalted butter 1 onion, finely chopped

1 pound chanterelle mushrooms, cut into bite-sized pieces 2 tablespoons port wine

1 tablespoon lemon juice

salt and pepper

⅔ cup heavy cream

2 tablespoons flat-leaf parsley, chopped

⅓ cup skim milk

Instructions 1.

Bring a large pot of water to a boil. Add pasta and cook until al dente. Drain.

Using a large non-stick skillet, melt butter over medium heat. Add onions and cook until soft, but not brown. Add mushrooms and cook until they soften, about 4-5 minutes. Add wine and lemon juice and cook for 3 minutes. Combine heavy cream and skim milk and pour into pan. Simmer gently until sauce thickens, about 10 minutes. Add parsley.

Place the flour on your surface, creating a well in the center. Add ⅔ of the water in the middle with a pinch of salt. With a circular motion, incorporate the flour to water. When it starts to crumble, use your hands. Add more water until you get a smooth and soft dough—it should take no longer than 7-10 minutes. Place dough a plastic bag, removing any air, and let rest under a tea towel for 20 minutes. To make the orecchiette, take a little bit of pasta, leaving the rest in the plastic bag. Roll the dough between your palms until you get an even, long strip of pasta no larger than ½ inch diameter. Place on your surface and cut with a sharp knife to ½ inch width. Then the tricky part: roll your thumb on the pasta, left to right. (The idea is that the thumb rolls inside the “hat” of pasta that is created.) Now, turn them inside out, always using your thumb. This way the wrinkles will be on the outside, providing the shape and texture orecchiette are famous for.

RAINBOW VEGETARIAN PAD THAI WITH PEANUTS & BASIL Ingredients For the Pad Thai

For the Sauce

4 ounces brown rice noodles (you can use stir-fry type noodles or Pad Thai noodles)

3 tablespoons fish sauce or vegan fish sauce substitute

1 zucchini 1 red pepper half a yellow onion 2 carrots 2 tablespoons oil 1 egg, beaten ½ cup peanuts, chopped

3 tablespoons brown sugar (or other sweetener) 3 tablespoons vegetable broth 2 tablespoons white vinegar 1 tablespoon soy sauce 1 teaspoon chili paste (sambal oelek)

½ cup fresh cilantro, green onions and basil, chopped

Instructions 1.

Soak uncooked noodles in a bowl of cold water.

2.

Spiralize the zucchini, red pepper, and onion into noodle-like shapes. Cut the carrots into very small pieces (or spiralize them, too, if they’re big enough).

3.

Shake up the sauce ingredients in a jar.

4.

Heat a tablespoon of oil over medium high heat. Add the veggies and stir fry with tongs for 2-3 minutes or until tender-crisp (if they are not spiralized, they might need longer). Avoid overcooking as they will become soggy and heavy. Transfer to a dish and set aside.

5.

Add another tablespoon of oil to the pan. Drain the noodles – they should be soft at this point. Add the noodles to the hot pan and stir fry for a minute, using tongs to toss. Add the sauce and stir fry for another minute or two, until the sauce is starting to thicken and stick to the noodles. Push the noodles aside to make a little room for the egg – pour the beaten egg into the pan and let it sit for 30 seconds or so. Toss everything around with the tongs. The egg mixture will adhere to the noodles and everything will start getting sticky.

Add in the vegetables, toss together, and remove from heat. Stir in the peanuts and herbs. Serve immediately.

TORTILLA CRUSTED TILAPIA WITH AVOCADO MASH

COMIDA Y ENTRETENIMIENTO CARAMELIZED LEEK SHALLOTS & PANCETTA GALETTE

Ingredients 1 12-inch pastry dough circle

Ingredients Fish 2 tilapia filets, cut in half vertically, rinsed and patted dry 1 cup of tortilla chips, finely crushed 2 teaspoons of chili powder (to taste) 2 teaspoons of ground cumin

tablespoon of water

cilantro, minced

¼ cup of olive oil

juice of 1 very juicy lime, about 1 ½ tablespoons

Avocado Mash 2 avocados, removed from skin and pitted 2 tablespoons of a yellow onion, finely diced

½ teaspoon of kosher salt Garnish wedge of limes for drizzling on fish (highly recommended)

½ teaspoon extra virgin olive oil 2 ounces pancetta, diced 2 tablespoons unsalted butter, softened

3 large leeks, white part only, cut in half lengthwise, thinly sliced and rinsed 1 shallot, diced 1 garlic clove, minced ¼ teaspoon granulated sugar

½ cup gruyere cheese, shredded ½ teaspoon black pepper 1 egg, lighten beaten salt to taste

Instructions 1.

Preheat oven to 400°F.

Pour oil into a large sauté pan and place over medium-high heat.

Add pancetta and sauté until crisp, about 3 minutes. Drain onto a paper towel and pour into a mixing bowl. Pour out all but 1 tablespoon of grease.

Crush tortilla chips in a sealable bag with your hands until they have a very fine consistency. Combine with chili powder and ground cumin. Place the tortilla mixture on a medium plate and set aside.

Melt butter and add leeks, shallots and garlic to the pan. Lower heat to medium low and sprinkle top with sugar. Stir and lightly season with salt.

Make the avocado mash by placing all mash ingredients in a medium bowl, mashing with a fork or potato masher to a chunky consistency (or finer consistency if desired) and set aside.

Allow mixture to lightly caramelize for 15 to 20 minutes.

Pour mixture into the mixing bowl with pancetta and allow to cool, about 5 to 7 minutes.

Add egg mixture to a medium shallow bowl. Dredge filets in egg and then pat both sides of tilapia filets with tortilla mixture until evenly coated. Preheat olive oil over medium high heat and add filets. Cook on both sides for about three minutes or until a nice golden brown. Remove from skillet, place on top of the avocado mash and serve immediately.

Gently toss mixture together with shredded cheese and black pepper until fully combined. Season with salt.

Pour mixture into the center of the rolled out pie dough and spread evenly, leaving a 2 ½ inch perimeter around the dough.

9.

Egg wash the perimeter of the dough and fold the edges over until sealed.

10.

Place galette onto a baking sheet lined with parchment and bake for 20 to 25 minutes or until golden brown. Allow galette to cool for 5 minutes and serve.

By providing oral cancer screenings during our patient’s dental appointments, we are able to identify any abnormalities in their mouth as quickly as possible. We were honored to be invited by the Astros to provide the same level of care to their team.” Dr. Muzny also advises that patients inspect their own mouths daily. It only takes a few moments to scan your mouth before or after you brush your teeth. If you see something abnormal in your mouth or any discoloration that doesn’t go away in 2-3 weeks, its important to have your dentist examine it and make sure it isn’t something more serious and possibly requires a biopsy. Oral Cancer can affect anyone, but there are certain risk factors including smoking and smokeless tobacco that can increase the likelihood of developing cancer. Dr. Brett Murphey is known throughout The Woodlands for bringing smiles to life. Together with his team, he works to brighten our smiles and keep our teeth healthy. For years he has been bringing his expertise to Guatemala, where he volunteers his time to make a difference in the lives of children who otherwise would have never seen a dentist. It’s a cause that is special to him, and he always gets his team and family involved. This year was a little more special.

Dr. Murphey has known the founder of these dental mission trips for more than 20 years. Dr. T. Bob Davis founded the annual event in 1977, and has led dental students and Christian dentists in bringing their skills to South American children in need every year since. This year, Dr. Davis is being honored with The American Dental Association’s Humanitarian of the Year Award, and as a result, this year’s trip was filmed. Not only did Dr. Murphey get to experience being on-camera, he got to do it with his daughter and son, who joined him on the trip. This was his son’s, who is only 7 years old, first mission trip. His daughter is a seasoned pro at 10, this being her second mission trip. “My daughter told me that it’s the best trip she’s ever been on,” Dr. Murphey laughed. “It’s amazing how kids react to the spirit of giving. When she said that I joked that we’ve been on much more exciting family vacations, but it’s wonderful to see how much she loves helping people. That’s really what it’s all about, even for me. Before I joined the annual dental mission trips, I had been invited on mission trips to build homes. That’s not my skill set, so I knew I wouldn’t be able to achieve much in the limited time we have. By bringing dental care to people who wouldn’t otherwise have access to it, I’m able to use the skills that I have to make a real difference.”

In addition to providing care, Dr. Murphey is passionate about educating the children he sees. Many of the children come to the missionaries through schools that are privately funded by churches and other organizations. These children are sent to the schools because their families cannot afford to raise them. They have never learned the basic tenets of oral health, and many have never even seen a dentist before. One of Dr. Murphey’s proudest achievements is seeing the same kids year after year, and noticing a difference in their overall health thanks to the education that he and fellow missionaries are able to bring. The mission trips are also a way for dental students to learn from experienced dentists. Originally the program only brought students from Dallas. Dr. Murphey advocated for Houston-area students, and his voice made a difference. Forty to 60 students join the mission trip each year, and now some of those students come from Houston. “I went to school in Houston and I live in The Woodlands, so I felt strongly about including students like myself in these trips,” Dr. Murphey said. “It’s a wonderful way for them to learn, and a great opportunity for me to model practices of giving that I hope the students will take with them into their careers. It’s always important to give back in any way that you can. As dentists we have very specialized experience that can help so many people.” Dr. Murphey and his team are back at work in The Woodlands where they’re continuing to bring joy to patients and neighbors alike.
